Parsley Lemon Salmon
Ingredients:
1/4 tsp Minced garlic
1/4 tsp Black pepper, freshly ground
1 cup Fresh parsley, loosely packed
1 Tbs Olive oil
16 oz Salmon fillet, about 1/2 inch thick
1 Tbs Feta cheese, crumbled
2 Tbs Freshly squeezed lemon juice
1/4 tsp Salt
1 1/2 tsp Minced fresh mint
1/4 cup Low sodium vegetable broth
Servings: about scaling
Cook Time: 15 minutes
Prep Time: 15 minutes

To Ems ? Gretchen did eat her fish tonight. In fact that's all we could get her to eat besides strawberries. Our dinner went well. Michael, the chef, even had seconds!

Sounds really good. I love fish, but I'm always disappointed when it turns out bland. This sounds really good.
I made this for dinner last night and we really liked it. We loved the sauce that goes on top! One problem I don't think my fish was very fresh, but it was still good. I served it with rice and asparagus.

This recipe is great and all, but lets focus on what we really want. More pictures of Gretchen. :) JK. Actually we really would love to see more of Gretchen. The pictures on here are adorable.
